This bright and creamy infused Lemon Posset recipe offers a delicious way to wind down while honoring the Ayurvedic principle that food can be both indulgent and medicinal. With its roots in traditional English cooking, the posset is a simple, elegant dessert made by curdling sweetened cream with citrus juice. In this version, we use Veda Warrior’s infused ghee butter to add a layer of richness while delivering a gentle cannabis microdose in every spoonful. Ghee is revered in Ayurveda for its ability to nourish tissues, enhance digestion, and act as a carrier for medicinal herbs—including cannabis.

Perfect for soothing the nervous system and elevating mood, this dessert is a subtle yet effective way to integrate cannabis into your wellness-centered diet.


Dosing

  • Servings per Recipe: 50

  • THC Dose per Serving: 2.5mg

  • Infused Ingredient: 3 oz (1 jar) Veda Warrior Ghee = 100mg THC


Ingredients

  • 6 quarts (6 liters) heavy cream (double cream)

  • 6 cups (1.2 kg) granulated sugar

  • 3 cups (720 mL) fresh lemon juice

  • Zest of 8–10 lemons

  • 3 oz (1 jar) Veda Warrior Infused Ghee

  • Pinch of salt (optional)

  • Garnish: Fresh berries, edible flowers, or a sprinkle of lemon sugar


Instructions

  1. In a large pot, combine heavy cream and granulated sugar. Heat gently over medium, stirring constantly until the sugar dissolves—about 3 minutes.

  2. Remove from heat. Stir in fresh lemon juice, lemon zest, and a pinch of salt (if using). Let the mixture sit for 1–2 minutes to begin the thickening process.

  3. While the mixture is still warm (not boiling), whisk in the Veda Warrior infused ghee until fully melted and thoroughly incorporated. This step ensures that the THC is evenly distributed.

  4. Strain the mixture through a fine mesh sieve into a large bowl or pitcher.

  5. Pour the strained posset into small serving cups, ramekins, or halved and hollowed lemons for an extra citrusy presentation.

  6. Let the cups sit at room temperature for 20–30 minutes, then refrigerate for at least 4 hours or overnight until set.

  7. Just before serving, garnish with fresh berries, edible flowers, or a dusting of lemon sugar.
