These Raspberry Coconut Cookies are a nourishing fusion of comfort and healing—crafted with Veda Warrior Infused Coconut Oil and enriched with Ayurvedic herbs like ashwagandha, fenugreek, and cardamom. Each ingredient was chosen to support balance, vitality, and emotional grounding. In Ayurveda, food is seen as medicine, and the combination of coconut, raspberries, and warming herbs makes this cookie both a treat and a tonic for body and mind. The result is a soft, golden cookie with crisp edges, bursts of raspberry flavor, and a subtle herbal warmth that calms the nervous system and uplifts the spirit.

  • Servings per recipe: 20 cookies

  • THC dose per serving: 5 mg THC per cookie (using one 100 mg jar of Veda Warrior Infused Coconut Oil)


Ingredients

  • ½ cup (1 jar) Veda Warrior Infused Coconut Oil (100 mg THC total)

  • ½ cup granulated sugar

  • ¼ cup light brown sugar

  • 1 large egg (or flax egg for vegan version)

  • 1 tsp vanilla extract

  • 3 ½ cups all-purpose flour

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ½ cup freeze-dried or frozen raspberries (crushed)

  • ½ tsp cardamom powder

  • ½ tsp ashwagandha powder

  • 1 tsp fenugreek powder

  • 1 tsp shatavari powder
  • 1 tsp finely grated lemon zest

  • 1/3 cup of dark chocolate
  • ¼ tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.

  2. In a large bowl, combine Veda Warrior Infused Coconut Oil, sugar, and brown sugar. Beat until smooth and creamy.

  3. Add the egg and vanilla extract, mixing until fully incorporated.

  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and the Ayurvedic herbs—cardamom, ashwagandha, and fenugreek.

  5. Gradually add dry ingredients to the wet mixture, stirring until a soft dough forms.

  6. Fold in crushed raspberries and lemon zest gently, mixing just enough to distribute evenly.

  7. Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing evenly.

  8. Bake 10–12 minutes, until edges are lightly golden and centers are soft but set.

  9. Cool completely before serving to allow the infused oil to stabilize within the cookie.
