Ingredients

2 garlic cloves, sliced

1 shallot, diced

2 cups pumpkin puree

3 cups vegetable stock

1 tsp salt

½ tsp black pepper

¼ cup Veda Warrior EVOO (infused olive oil)*

¼ tsp cardamom
-
¼ tsp ginger (ground)

¼ tsp cinnamon

¼ tsp nutmeg

¼ tsp ground cloves
Instructions

In a measuring cup, add 5-10 droppers of Veda Warrior infused olive oil (1mg THC per 1ml dropper, dosing per your needs). Add uninfused olive oil to the measuring cup until you have 1/4 cup of total olive oil. In a large pot, warm the olive oil over medium heat.

Add diced shallots and sauté until translucent (about 3–5 minutes).

Add sliced garlic and cook until fragrant—being careful not to burn it.

Stir in the pumpkin puree and vegetable stock. Bring to a gentle simmer.

Add all ground spices—cardamom, ginger, cinnamon, nutmeg, and cloves—along with salt and black pepper. Reduce heat to low and let simmer for 15 minutes.

Remove from heat. Use an immersion blender to puree the soup directly in the pot, or carefully transfer it in batches to a blender. Blend until completely smooth and creamy.

Taste and adjust seasoning if needed.
