1 English cucumber

½ tsp kosher or flaky sea salt

2 cups plain whole-milk Greek yogurt

¼ cup fresh lemon juice

2 garlic cloves, finely grated

½ cup chopped fresh mint
Instructions

Cut the cucumber in half lengthwise and use a spoon to remove the seeds. Grate the cucumber using a box grater.

Place grated cucumber into a strainer and mix in ½ tsp flaky sea salt. Let it sit for 1 hour, stirring occasionally to release water.

After draining, gently press the cucumber to remove excess moisture.
