Granulated sugar: ¾ cup

Brown sugar: ¼ cup, packed

Vanilla extract: 1½ tsp

All-purpose flour: 2¼ cups

Baking powder: 1 tsp

Baking soda: ¼ tsp

Freeze-dried strawberries: ¾ cup, crushed
Instructions

Prepare the Cheesecake Filling
In a small bowl, mix cream cheese, powdered sugar, and flour until smooth. Drop quarter-sized dollops onto parchment paper and freeze for 10 minutes. -
Prepare the Cookie Dough
In a large bowl, cream Veda Warrior Ghee Butter, granulated sugar, and brown sugar until fluffy and well combined.
Add egg and vanilla extract; mix until smooth.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Gradually add the dry mixture to the wet ingredients. Stir until just combined.
Fold in crushed freeze-dried strawberries. -
Assemble the Cookies
Scoop about 2 tbsp of dough and flatten slightly in your palm.
Place a frozen cheesecake dollop in the center and gently wrap the dough around it to seal.
Roll into a smooth ball and place on a parchment-lined baking sheet. -
Bake
Preheat oven to 350°F (175°C).
Bake for 10–12 minutes, until edges are lightly golden and centers are set but soft.
Let cool on the tray for 5 minutes before transferring to a wire rack. -
