Ingredients

4 cups full-fat milk (or oat milk for a plant-based version)

1/2 cup Punjabi jaggery (or unrefined cane sugar)

1 cup cashews, soaked overnight and peeled

1 cup pistachios, soaked overnight and peeled

10 black peppercorns

10 strands saffron

Instructions

Soak & Prep:

Soak the almonds, cashews and pistachios overnight. Peel and finely chop them in the morning.

Simmer the Milk:

In a large saucepan, bring the milk to a gentle boil.

Spice & Nut Infusion:

Add almonds, pistachios, cashews, cinnamon, star anise and black peppercorns to milk.

Simmer for 15-20 minutes until reduced by half.

Sweeten & Flavor:

Stir the jaggery into the reduced milk. Mix until fully dissolved.

Add cardamom, salt, and saffron, and allow the milk to cool completely.

Place a clean cheesecloth over a bowl and strain the mixture.
